Most food powders are hygroscopic—they love water. Unfortunately, the standard way we process them creates the perfect conditions for them to get it.
Traditional sack tipping stations often leak. When you rip open a bag of powder, a cloud of fine dust escapes into the factory air. This dust is incredibly dry initially, but it has a massive surface area.
The Problem: That dust cloud absorbs ambient humidity like a sponge. When it settles back onto the equipment or into the product stream, it carries moisture with it. This is "invisible moisture" that won't show up on a standard moisture analyzer until it's too late.
To break up lumps, many plants use high-speed hammer mills or aggressive lump breakers. These machines rely on impact.
The Problem: Impact generates heat. Even a small temperature rise of 5–10°C can be disastrous. It warms the powder, which then cools rapidly when exposed to the ambient air. This cooling causes "sweating"—moisture condenses onto the particle surfaces. These damp surfaces stick together, forming hard micro-agglomerates that no blender can break.
